Coconut And Lime Cake

This coconut and lime cake contains layers of sponge and cream cheese icing,
it's an attractive centerpiece that your family, friends or guests will love.

Ingredients:
225 g self raising flour
225 g caster sugar
225 g unsalted butter at room temperature
4 eggs
50 g desiccated coconut
grated zest of 1 lime
2 tbsp lime juice

For the icing:
100 g icing sugar
grated zest of 1 lime
2 tbsp lime juice
300 g cream cheese at room temperature
15 g toasted desiccated coconut to decorate

Method:
Preheat the oven to 180° C (350° F/Gas 4)
Grease the tin and line the base with baking parchment
Sift the flour in a large bowl, add the caster sugar, butter, and eggs and mix until well combined
Mix in the coconut lime zest and lime juice
Spoon the batter into the tin and level the top
Bake for 1 hour or until risen and firm to touch
Leave to cool for 5 minutes before removing from the tin, then cool completely on a wire rack
Divide the cake into 3 equal layers

To make the icing:
Sift the icing sugar into a bowl, add lime juice, lime zest and cream cheese
Whisk until the mixture is thickened
Spread over layers of the cake and assemble them together
Scatter the toasted coconut over the top to decorate
